Easy brownies

For Chris
Easy Cocoa Brownies

¾ cup flour

¼ teaspoon baking powder

¼ teaspoon salt

1 cup sugar

2 eggs

1/3 cup vegetable oil

1/3 cup unsweetened cocoa

1 teaspoon vanilla extract

¼ teaspoon almond extract (optional)

¾ cup chopped walnuts, or other nuts (optional)

Preheat oven to 350. Great the bottom and sides of an 8 inch square pan.

In a small bowl, stir together flour, baking powder and salt. In another bowl, mix together the sugar, eggs and oil with an electric mixer. Stir in the cocoa and extracts until blended. Stir in the flour mixture just until combined. Stir in the nuts. Bake for 30 to 35 minutes or until a cake tester inserted 2 inches from the center comes out almost clean.

Cool the brownies in the pan on a wire rack. Cut the brownies into 16 bars. Store the cooled brownies in an airtight container at room temperature.

Or you could always do as I do and just dump everything into a single bowl and just mix until blended. Then dump into the pan and pull it out at 30 minutes letting it cool on the stove and then cutting into large squares for eating.
